Almond and date macaroons

500g dates

1 cup sugar

2 egg whites, stiffly beaten

250g almonds

Juice of 1/2 lemon

(Optional: 1 teaspoon cinnamon and 1 tablespoon orange blossom water)


Mince the dates and almonds with orange blossom water and cinnamon.

Add the sugar.

Fold the egg whites into the date mixture.

Spoon into a piping bag and create swirls on greaseproof paper.

Bake at 180 degrees for approximately 20 minutes.
