Pesach brownie recipe

These brownies are so good and you would never tell they are made with matzah meal! I like to use fine matzah meal as far as possible to get a more gooey and fudge-like consistency. Try this recipe. It's really good!

Makes 16 squares.


250g dark cooking chocolate

1/2 cup butter, room temperature

2/3 cup cream cheese

2 cups caster sugar

4 eggs

2 teaspoon vanilla essence

1 cup matzah meal

4 tablespoons potato starch

1 cup finely chopped pecans (optional)

For a parve cake, substitute oil and coconut cream from the butter and cream cheese.


Preheat oven to 180 degrees centigrade.

Grease a rectangular cake tin or line with parchment paper.

Break the chocolate into pieces and melt in a double boiler. Remove from the heat and let it cool slightly.

Cream butter and cream cheese in a mixer. Beat in eggs and sugar, alternating one at a time.

Add in the vanilla and mix well.

Add in then matzah meal, potato starch and cooked chocolate.

Fold in the nuts if using.

Pour the mixture into the cake tin and bake for 20-25 minutes.

Cut with a sharp knife while still warm.
