Updated: Jun 10, 2020
While in quarantine, I have been cooking and baking - testing recipes for Pesach - and looking for healthy snack such as these charoset energy balls.

Why charoset? Because.....
1) the ingredients are almost identical ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2) Pesach is also dominating my headspace⠀⠀⠀⠀⠀⠀⠀⠀⠀
3) I did actually use a charoset recipe for one of these⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
And so it is, charoset energy balls for a healthy snack in lockdown.
Why don't you try make some?⠀ (recipe below)
⠀⠀⠀⠀⠀⠀⠀⠀
Base recipe:⠀⠀⠀⠀⠀⠀⠀⠀⠀
150g pitted dates⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup almonds⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 tsp cinnamon⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 tsp vanilla extract⠀⠀⠀⠀⠀⠀⠀⠀⠀
A pinch of sea salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
For variatons:⠀⠀⠀⠀⠀⠀⠀⠀⠀
Add into the base recipe items such as dried figs, tahini, orange blossom water, or matcha. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Put all the ingredients into a food processor and blitz together.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Form into balls and then roll the balls in ground flour, shredded coconut, cocoa, sesame seeds or anything else that appeals to you! This recipe should make 16 balls.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
If the mixture gets too sticky to roll, dip your hands into a bowl of water.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Keep in an airtight container to enjoy when you are feeling peckish!
