Cucumber, fennel and avocado salad
This salad goes very well with fish cakes. It's almost like a salsa.
Ingredients:
5 small cucumbers, chopped
1 avocado, cut into small pieces
1 fennel bulb, chopped
1/2 small red onion chopped
Seeds from 1/4 of a pomegranate
Dressing
1/2 cup olive oil
1/2 cup white wine vinegar
1/4 cup chopped cilantro leaves
1 teaspoon sugar
salt and pepper
Method:
Combine all the salad ingredients together in a bowl
Make the dressing and mix into the salad so that it is nice and juicy.
Serve with grilled white fish or fish cakes.
