
Nutty biscuit bars for Pesach

Ingredients:
1/2 cup (125 ml) water
1 cup (200g) castor sugar
1 tbsps rum (optional - I used triple sec as I did no have rum)
1 tsp vanilla essence
1 packet almonds (100g)
1 packet hazelnuts (100g)
1 packet red wine biscuits (Pesadich) (300g) - see pic below - or any other biscuit (when not Pesach)
300g dark chocolate - melted
Method:
Line a 22cm pan with parchment paper
Heat water and sugar and until sugar dissolves and then boil for 2 minutes
Add butter and melt
Stir in rum if using and vanilla essence
Grind nuts in a food processor
Add biscuits and blitz until fine (or curse in a bowl)
Combine biscuits and nuts with syrup
Separate mixture into two bowls
Add 3/4 pf chocolate to one bowl and mix until chocolate evenly spread
Press the chocolate mix into the bottom of the pan
Then press the nut mix on top of that
Pour the remaining chocolate over the biscuit mix and allow to set in the fridge for at least 30 minutes.
Cut into squares with a hot knife and enjoy.
