
Persian cucumber and mint salad

While looking for new salads to put onto my Pesach menu, I came across this fresh and healthy recipe which makes perfect eating during quarantine and Pesach.
Such a simple salad to make and so delicious.
Recipe:
Take cucumbers, cut into slices and remove the seeds. Then make the dressing by mixing 2tsp olive oil, 40ml apple cider vinegar, 2tbsp honey, chopped mint and a pinch of salt. Pour over the salad and sprinkle with pomegranates. That's it!
