My grandmother had three methods of making this pie. The one I use here is my favorite and the one that she made most often. This Spanakopita recipe can be made with phyllo pastry or puff pastry. I prefer phyllo for individually wrapped triangle shapes and puff pastry for a pie shape.
1 packet of puff pastry
300g feta cheese
4-5 spring onions chopped
2 large eggs
1 teaspoon of black pepper
Line a greaseproof pie dish with pastry
Fry the onions in olive oil and add chopped spinach.
When cooked, remove from the heat. Allow too cool.
Crumble the feta cheese into spinach.
Add freshly chopped dill.
Beat eggs and add to the spinach mixture. Mix in salt and pepper.
Transfer the mixture to the pie dish.
Cover the spinach with a layer of pastry. Roll the edges over to seal the pastry.
Bake at 180 degrees until golden brown.
Serve hot or cold.
